Peru
UCC Special Selection Decaf

Mexico
UCC Sspecial Selection Decaf
This coffee is exceptional - not just for a decaf, but compared to any coffee
we've had this year from Mexico. A High Grown Arabica from Chiapas, it is
carefully decaffeinated using mountain water by Descafeinadores Mexicanos,
in Veracruz. The resulting decaf beans produce a more pronounced and subtle
cup, in our opionon, than Swiss Water Process decafs. Shade Grown and Organicically
certified by OCIA.
Aromas of cedar
and malt, big complex flavors of sweet caramel, tobacco and chocolate. Sweet
but not too soft, full and buttery body all the way to Full CIty+. NIce long,
rounded finish, with pronounced chocolate notes as it cools in the cup.
Costa
Rica La Pastora Tarazzu
This strictly
hard bean, high-grown Arabica is cultivated at an average altitude of 1400
meters, on the shady slopes of Tarazzu county above the San Marcos Valley
of Costa Rica. Finca La Pastora is one of a few coffee farms that produce
such mild and fragrant, yet full-bodied coffees from the region. Organically
certified and Fair Trade, also deemed a habitat and forest-friendly coffee
by the Rainforest Alliance.
Sweet
chocolate aroma, muted berry notes, soft acidity, smooth and full bodied,
long pleasantt aftertaste.
Bolivia
Cenaproc
From the Cup of Excellence award-winning Cenaproc Cooperative. Cultivated
at over 1550 meters, this Strictly Hard Bean (SHB) Arabica is wet-milled,
then fermented for 18 hours and washed with mountain spring water. The coffee
is then partially dried in the sun on patios and finished in machanical dryers.
Shade Grown, and Certified Organic production, and Fair Trade as well.
This
new crop coffee is very complex, with bright acidity, with notes of citrus,
vanilla and cedar, and a soft chocolate finish. At a City roast, is shows
off all of the delicate complexity and is bright and clean. Takei it to Full
City, or a bit farther, and it stands up beautifully - more muted acidity,
and more chocolate and caramel in the finish. Rest the roast for at least
24 hours for maximum enjoyment!

Brazil
Poco Fundo
From
the Sul de Minas region of Southern Brazil, the famed Poco Fundo is Organic,
Shade-Grown and Fair Trade. A very low-acid coffee, but full of flavor. A
classic Brazil.
Fruit in the aroma, Notes of chocolate and and a little citrus in the cup. Smooth, deep and clean from start to finish.
India Jasmine Estate
This
coffee is on the 150 acre Jasmine Estate, in the Chikamagalur
District in Karnataka State. Originally planted in 1888, the Estate was acquired
by K.R. Sethna, in 1973. Sethna's background as an environmentalist and an
ornithologist motivated him to convert the entire estate 100% organic production
in 1989. The Estate was certified organic by SKAL in 2002.
This hard-bean coffee is grown at over 1200 meters in forest-alluvial and
humus-rich soil, under a mixed canopy of 40 foot native shade trees that also
help to conserve the natural flora, fauna and
soils of the Estate.
Sweet floral aroma, jasmine notes throughout the cup, very clean and crisp.
Bold medium+ body, smooth mouth feel, with a long pleasant aftertaste.
Of course you knew Calvin as your inspired coffee man. But Calvin was many things to many people. A dear, dear brother and uncle. An accomplished sailor, pilot, major-studio cameraman, computer wiz, jazz piano player, chef and hotelier, wine and exotic car importer, motorcycle authority and aficionado.
Good friend and confidant to many, countless people.
We know you will miss Calvin and his green beans. We know you will miss his enthusiasm and love for coffee and life. But not as much as he will miss you. If there’s any consolation, some people, somehow, manage to live on. Calvin is one of those.

Papua
New Guinea Purosa
Coffee from Papua New Guniea is a pretty rare
bean; the abundant rainfall and rich volcanic soil provide the perfect conditions
for growing beautiful coffee. Getting the coffee harvested and to the mill
for processing is the hard part - dirt roads and massive rains make the task
difficult, to say the least. Organic production techniques were introduced
to PNG in1991, and those practices, along with the adoption of the Fair Trade
model, have enhanced the quality and value of the coffees of Paupa New Guniea.
Grown at over 1800 meters, this strictly hard-bean (SHG) coffee is mix of
Typica, Mondo, Novo and Arusha arabicas. Certified organic by NOP/USDA, shade
grown and Fair Trade.
Considered a bit on the wild side, with a pronounced nut and mild chocolate flavors; delicate fruit in the finish.
Colombia
Mesa de los Santos SMBC
Cafe Organico Mesa de los Santos is grown 100%
ecologically, as it was 100 years ago, protecting nature, with no chemicals,
using natural fertilizers and spring water. This coffee is grown under shade
at high altitude, in the coffee region of Bucaramanga in Northeast Columbia.
Cultivated in a mix of banana and and shade trees, Mesa de los Santos is certified
Organic by Biolatina. Fair Trade, Shade-Grown, European Preparation –
and Certified Bird Friendly under the Smithsonian Migratory Bird Center of
the Nation Zoo.
Bright acidity, sweet, with a complex balance of citrus and floral notes. Medium to heavy body; clean and very consistent, due to the care and quality of cultivation.
El
Salvador Monterey SMBC
The Monterey Estates are located in the Tacuba area, in a mountainous region
of El Salvador that is especially unique because much of the farmland borders
the El Imposible National Park, here over 500 species of butterflies, almost
300 species of birds and 30 species of mammals take refuge. Because of the
rich diversity of trees in Tacuba, the landscape is perfect for producing
coffee of exceptional quality.
This
El Salvador Monterey is 100% Organic Bourbon - estate and shade-grown at an
average altitude of 1400 meters.Total production is limited to only about
600 bags. USDA Certified organic, and Rain Forest Aliance certified as well.
Clean, sweet and well balanced; with soft fruitiness, spice and chocolate notes to the finish. Shows nice crema for espresso, very consistent and smooth body.
Sumatra
IKA Mandheling
This
coffee is a traditional semi-washed Sumatra. The beans are removed from the
cherry while still fresh, allowed to ferment for a short period, then washed
to remove some of the residual fruit. The beans are then sun dried. Sumatra
is a unique coffee origin, and Mandheling is truly a classic coffee. This
coffee exhibits an extreme level of care in cultivation and processing.
Smooth, and heavy body with sweet earthy notes and fruity aromas.
Peru
Norte SMBC
This washed coffee is produced by the Cepicafe cooperative,
and is 100% typica variety. It is shade-grown in a mix of banana plants
and other fruit and forestry trees, and is valued for its quality and for
it's environmentally friendly process.
Organic, Fair Trade and Shade-Grown; Smithsonian Certified Bird Friendly.
Bright acidity with full depth of flavors. Clean cup, Medium bodied.
Guatemala
Dulce Leonarda Huehuetenango
Grown
in the famed Huehuetenango region in the highlands of Guatemala, the Dulce
Leonarda is cultivated in a mixed crop of banana and citrus trees at high
altitude, between 1300 and 1600 meters, and is designated SHB, or super hard
bean. Shade grown, wet-processed and sun dried.
A bit less intense than the Asobagri HHT we had last season, but still almost perfectly balanced - mild acidity, bright yet very smooth; full bodied, sweet in the cup with light notes of citrus and deeper chocolate tones at a Medium+ roast. An amazing coffee.
